Simply Baked Lemon Chicken

Thin, juicy baked chicken with lemon, garlic, olive oil, and a little heat. Clean, quick, and perfect for meal-prep or serving a crowd.

Ingredients

  • 4 thin chicken breasts
    (If not sold thin, slice horizontally into cutlets or pound lightly.)

  • Juice of 1–2 lemons

  • Several lemon slices

  • Extra-virgin olive oil (a generous drizzle over everything)

  • 2–4 cloves garlic, minced

  • Salt

  • Black pepper

  • Red pepper flakes

Instructions

  • Preheat oven to 400°F.

  • Arrange the 4 thin chicken breasts in a baking dish.

  • Drizzle generously with olive oil.

  • Sprinkle the minced garlic evenly over the chicken.

  • Squeeze lemon juice over the top; tuck lemon slices around and under the chicken.

  • Season with salt, black pepper, and a pinch of red pepper flakes.

  • Bake 18–22 minutes (thin chicken cooks faster), until cooked through and juicy.

  • Let rest a few minutes before slicing or serving.
