Simply Baked Lemon Chicken
Thin, juicy baked chicken with lemon, garlic, olive oil, and a little heat. Clean, quick, and perfect for meal-prep or serving a crowd.
Ingredients
4 thin chicken breasts
(If not sold thin, slice horizontally into cutlets or pound lightly.)Juice of 1–2 lemons
Several lemon slices
Extra-virgin olive oil (a generous drizzle over everything)
2–4 cloves garlic, minced
Salt
Black pepper
Red pepper flakes
Instructions
Preheat oven to 400°F.
Arrange the 4 thin chicken breasts in a baking dish.
Drizzle generously with olive oil.
Sprinkle the minced garlic evenly over the chicken.
Squeeze lemon juice over the top; tuck lemon slices around and under the chicken.
Season with salt, black pepper, and a pinch of red pepper flakes.
Bake 18–22 minutes (thin chicken cooks faster), until cooked through and juicy.
Let rest a few minutes before slicing or serving.
