Tomato Corn Toss

Sweet summer corn with cherry tomatoes, herbs, and a lemon–sherry vinaigrette. Fresh, crisp, and the easiest side you’ll make all season.

Ingredients

  • 2 cups cherry tomatoes, halved

  • 3 cups fresh corn kernels (about 3–4 ears, depending on size)

  • 2 Tbsp chives, finely sliced

  • A handful of basil, torn or thinly sliced

  • Juice of ½ lemon

  • Olive oil (a generous drizzle)

  • Sherry vinegar (1–2 splashes, to taste)

  • Salt

Instructions

  • Add cherry tomatoes, chives, and basil to a large bowl.

  • Drizzle with olive oil, add the lemon juice, and splash in the sherry vinegar.

  • Sprinkle with a pinch of salt.

  • Toss gently until everything is coated.

  • Taste and adjust: more lemon for brightness, more vinegar for tang, more basil for fragrance.

  • Serve right away or let sit 10–15 minutes to marinate.
